Chef Justin Niessen, who moved from Curaçao to the Netherlands at 18 to study at the hotel school, brings a deep passion for Caribbean cuisine. His roots in the island culture inspire him to combine traditional flavors with modern culinary techniques. “I love the combination of Caribbean food with a twist,” says Justin, “and I draw on memories of my childhood, where the freedom and tranquility of Mondi inspired me to create new and exciting dishes.” Each plate at Mondi Beach Club is a tribute to the warmth and spirit of the Caribbean.
